Classic? C'mon it's only been... 9.. years...
~I'm probably not serious~
Oh and you can just call me Dave.
No need for the whole screen name.

Re: Classic PS2 Games
Devil May Cry (sequels too)
Shadow of the Colossus
Okami (though, the controls are better on the Wii)
You've seen the Final Fantasy thread
Prince of Persia: Sands of Time (Warning: Warrior Within has awful voice acting)
God of War
Edit: I have a much longer list, but won't recommend until I've actually finished them

So, no PS2 games to recommend then?
Edit: I was talking to Dave-O here.

Re: Classic PS2 Games
What? My list is stuff for PS2. Oh, you wanted PS2 *exclusives*? Um, nope, got nothing.
Re: Classic PS2 Games
Well I guess it depends on your definition of 'classic', whether you want games of a particular age (e.g. pre-2005 PS2 games), or just really good games.
A couple of games which immediately spring to mind for me, in terms of really good PS2 games, are Shadow of Memories (or Shadow of Destiny in the US) and Persona 4. Both absolutely incredible games with really interesting and enjoyable stories and really fun and innovative game play. Of course, if I take my original definition of classic in terms of the games age, only Shadow of Memories could be deemed classic!

This.

I've never had a PS2, so I can only suggest games that were ported over. Resident Evil 4, Okami.
Oh, also, get the Harvest Moon game for the PS2. I never got to play that one because of the aforementioned lack of PS2. But, Harvest Moon games are mostly solid and that one came out before they decided to gear them towards kids.

Yakuza is a good take on a story driven rpg/brawler. Worth checking out.

Yup, this one too, though I'm currently replaying it on the PC because they were selling it cheap on Steam. Dang not having my PS2 when I'm at uni!

I'm sorry, I couldn't resist. But seriously, Cureless Poison's list pretty much sums up what I would suggest.
