My absolute favorite I've watched recently at a friends house is Serial Experiments Lain. That is the best Anime ever imo.

BLEACH - Good old fashioned hacky-slashy action with a nice punk style and a nice soundtrack
The Melancholy of Haruhi Suzumiya - Jokes aimed at anime stereotypes with a quirky premise; an addictive ending song and a huge Pheonix Wright parody are icing on the cake
RESERVoir CHRoNiCLE Tsubasa - Interesting story featuring jumping between dimensions and tons of cameos from other CLAMP universes (Cardcaptor Sakura, Chobits, xxHolic, etc.)
Genshiken - The story of a bunch of college otaku, their club, and the people who put up with them

Last Exile - Steampunk fun about some kids running an airship delivery service who get caught up in a great war.

Yakitate! Japan - It's like Iron Chef, only with lots of bread and even more puns.

Fushigi Yūgi - Two Japanese high-school girls get sucked into a book from ancient China, where they run the usual gamut of love, loss, and sacrifice.

Makai Senki Disgaea - Like the game, but with less turn-based strategy and more cut-scenes.

The anime you describe is called Haibane Renmei, and I've heard it's very good.

Everything everyone has suggested so far is very good.

Bleach is indeed awesome. I thought of it, but I wouldn't recommend the English version because they messed up the voice acting. You should read the manga of Bleach too because the anime goes in a completely different direction... Yes I am obsessed...

My taste in anime tends to lean towards more serious series with a touch of humor but there are exceptions.

i've yet to see a really good anime . . . you have ok anime like sonic x or the first season of pokemon . . somewhat tolerable anime like .hack or . . uh . . . the animatrix . . and then the rest i've seen is utter crap . . like yugio, the otehr pokemon seasons, or pretty much every anime on cartoon network.

most of what i've seen consists of horrible plots ugly art styles and poor voice acting.

That's because you haven't been watching anime. Cartoon network renditions are utter crap. For some reason, american tv networks seem to assume that anything animated will only appeal to children, so they water down some perfectly good shows to make them acceptable to show to children. Almost every english-dubbed anime I've seen has sucked hard, and I suspect most of them wouldn't have sucked as much if the spoken dialogue were closer to the original japanese meanings.
The only exception I've come across was Hellsing. The english dub wasn't bad, and considering the show was set in England, it didn't seem to take away from the show at all.

I remember when I first watched SE Lain. The anime film club... thingy... at Camosun, with Bill & James and the rest. Everybody else went back to James' place for dinner, but I stayed and watched the series, then went home for spaghetti(my house was closer).

Been watching Record of Lodoss War, myself. Watched Death Note not too long ago, as well, and busted out the old FLCL to show my roommate. Every now and then I watch an episode of Texhnolyze(ASBURDLY FUCKING GOOD) and Elfen Leid(PRETTY FUCKING GOOD), and even Rurouni Kenshin(aka Samurai X). Been thinking about tracking down some Excel Saga and Macross Zero, as well. I like to rewatch animes I've already seen, I guess. D:

I'll take more reccomendations, I s'pose.

Oh, and I watch probably 70% of my animes off this site:

Agreed. It's pretty good, if you ask me. Better than Bleach, that's for sure.
I could never get into it, really. That and Naruto, guh.

Berserk is another of my favourites. Probably in my top five.

Hellsing (the manga, the TV series butchered it): Insane vampires, werewolves, nazi vampires, secret organizations, ultraviolence.

Death Note: Crazy set-up, it's like watching V for Vendetta, where you slowly realize how perfectly orchestrated everything is. Also, great psychological warfare.

Lain: Is Lain.

FLCL: Best described out of context. Two people fighting 15,000 feet in the air with laser guitars. A robot with wings and a halo, and huge jaws in his chest. An alien growing out of a main character's head.
