The penny guy was relying on an old urban legend that holding a penny in your mouth while giving a breath sample would fool the analyzer. *Mumble mumble something about copper.* Swallowing the penny isn't supposed to be part of the procedure - it sounds like he added that step to remove the evidence...

That also might be a result of you being subconsciously aware that you are sleeping in a different environment than your home, which feels familiar and "safe". Your body might then be more alert when away from home, even while asleep.
