I think that the change really promotes the "fun Magic night" atmosphere that they want to cultivate for FNM. By not forcing a store to adhere to one of a few select competitive formats, FNM can become a more community-stylized event, which is a very positive change.

Also, I love, Love, LOVE these commercials. I think they plan to have television (lore equivalent) sets in bars at spaceports. Not sure what they have in terms of shows, but the commercials will be worth checking out the television for alone.

It's worth noting, however, that it's no exactly the same as the one you made; this will randomly select any legal target, not just ones with the same controller.

I think a big part of being successful is knowing your location and having a good atmosphere. If the location and atmosphere work, the limited menu shouldn't be an issue, but it's certainly a high-risk prospect. I do feel that by making each dish diverse, you mitigate that, somewhat.
