If Jupiter would turn into a sun. It's mass wouldn't actually change. It wouldn't accumulate more mass from it's surroundings than before, but actually even loose mass because of the radiation.

True if Jupiter became a star it would very slowly lose mass both to fusion and to solar wind. However Jupiter's mass would have to increase to raise its core temperature hot enough to for fusion reactions to occur.

Probably, however it's full of those monoliths, and according to the sequel of the sequel those are computer and can do anything. In 3001 they actually try to get a computer virus onto one of the monoliths. The virus was stored in a high security vault on the moon.... I stopped reading there because of the pain.

If you mean gravity, gravity is a fundamental force resulting from mass and density. Each of the monoliths has mass, which they are adding to the already considerable mass of Jupiter.

As the mass of Jupiter increases, so does its resulting gravity, causing it to pull harder on everything composing it and around it towards its core, eventually igniting fusion and producing a star.

The required mass is several times Jupiter's current mass. If the monoliths contained the required mass, their mass would would strongly effect the orbits of other objects in the solar system. Jupiter contains most of the mass in the solar system outside of the Sun and has a measurable effect on the orbits of other objects. If there were another ten Jupiter masses orbiting the Sun, the orbits of other solar system objects would be quite different.
