Older game with only a modern-day graphics update? Simple: The Longest Journey. Everything else, the interface, basic game-play, all of that can stay the same and still play well (it is an adventure game, after all).

Myst needs to be redone, why, because Riven's graphics are still great and the only good game in the series without realistically rendered graphics is Myst, properly redone, not real time like realMYST, but prerendered and ultrarealistic graphics.
