I bought some nice Danish Bleu at Costco yesterday, and am very much looking forward to consuming it.

As for "those fancy cheeses", it should be noted that Cheddar is just another variety, until due to its ease of manufacture and somewhat neutral (some would say boring) taste, it became the de facto cheese of the masses. Most cheeses are just the particular variety of the area they originated from, since traditionally cheeses were only good for a limited time, and so did not travel far.

this is true but some cheese last for amazing lengths of time.

I like mimolette a lot. It has a nice nutty flavor.
