Well, if I have my Lactose Pills, I vote for Havarti, as it is my favorite forever, but if I am not allowed chemical help, my vote goes to Lactose free

My absolute favorite cheese is herb-infused chèvre. OH god so good. I have eaten pounds of that stuff in one sitting.
My favorite non-goat cheese is probably a young, smoked Gruyere. Sweet, nutty, and smokey. Reminds me of barbecue.
Both of these are really expensive, unfortunately! So I rarely have them.

Ditto, I too love the Chevre with herbs. But my favorite goat cheese is only sold at the Athens Farmer's Market in Athens, Ohio. It is called "Smokin' Goat" and it is chevre style goat cheese with spices that has been lightly smoked. Sooooooo goood

Brie is a terrible cheese, unless you're serving brie en croute. I hate most soft-rind cheeses, honestly. Too bitter.

I like a nice mild English cheese Red Leicester is probably my favourite, followed by Double Gloucester or a mild Cheddar. I also like Italian cheeses.
Also Camembert, and I don't care how excrementally runny it is!
