St. Paulin - it's one that both a) we carry in the deli (I was impressed with it when I tried a sample) and b) is mentioned in that Most Holy Of Sketches. ;)

Some day I want to TRY "Venezuelan Beaver Cheese"...

Well, if I have my Lactose Pills, I vote for Havarti, as it is my favorite forever, but if I am not allowed chemical help, my vote goes to Lactose free

EDIT:Milk pills are a [preferred deity]send. I really like cheese and with the pills, I can try them even though I was born without the genetic mutation allowing me to digest dairy

I'm fond of mozzerella and haloumi, personally. Fried haloumi is delicious.

I could eat that stuff all day.
take a couple chunks of the soft stuff, throw it on a salad with some balsamic vinegar and were good to go

i like brie, very much. On a cracker or a piece of fresh bread, nothing can beat that...

that my friends is the most marvelous cheese, it's the only cheese you can decently put in a poutine for make it good. If you can one day put a hand on this one, go for it. each time i go back into saguenay, i always make a detour to get fresh cheese from them...

So many votes for the same kinds of cheeses! Boring boring boring!

My absolute favorite cheese is herb-infused chèvre. OH god so good. I have eaten pounds of that stuff in one sitting.

My favorite non-goat cheese is probably a young, smoked Gruyere. Sweet, nutty, and smokey. Reminds me of barbecue.

Both of these are really expensive, unfortunately! So I rarely have them. :(

Ditto, I too love the Chevre with herbs. But my favorite goat cheese is only sold at the Athens Farmer's Market in Athens, Ohio. It is called "Smokin' Goat" and it is chevre style goat cheese with spices that has been lightly smoked. Sooooooo goood

A good unpasteurised Stilton.

Also, plain chevre, double Gloucester, or havarti, if I'm having a sandwich.

Gorgonzola or some other bleu is nice on crackers.

Brie is a terrible cheese, unless you're serving brie en croute. I hate most soft-rind cheeses, honestly. Too bitter.

I like a nice mild English cheese Red Leicester is probably my favourite, followed by Double Gloucester or a mild Cheddar. I also like Italian cheeses.

Also Camembert, and I don't care how excrementally runny it is!
