simple way to make scotch eggs:
Boil eggs for 5-6 minutes then carefully peel (they are very softboiled at this point). Keep in cool water until you need them.
Take yummy sausage meat out of the casing. Grab a ball and smooth it out into a thin patty.
Take an egg, roll it in flour, place in the center of a sausage patty. Wrap completely in sausage meat. If you have too much meat, just pull it off.
Be careful though, you can pop the eggs if you squeeze too hard. Repeat as many times as you want eggs.
If you want to be fancy, make your own sausage meat using ground meat products (beef, lamb, pork, chicken, turkey, etc.) and flavour as you like.
Bread these egg-shaped sausage balls (flour, egg wash, panko/breadcrumbs)
Deep-fry or pan fry to colour golden brown. Place in 350F degree oven for about 10 minutes-ish. They'll still be golden brown, and the egg yolk will still be a little runny. Bake longer if you want it fully cooked. Serve with mustard. Enjoy!
