I had some milk about to go, so yesterday I made a mornay with it. To go with this mornay (sharp cheddar, as I don't have any gruyere or other traditional mornay cheeses), I made rice with veggies (frozen mixed veggies cooked in the rice), and chicken cutlets, using pulverized stale unsalted saltines as crumbs. For being my first time making cutlets, I'm super proud of myself! I pan fried them in a drizzle of canola oil, and they turned out perfectly tender and juicy inside and nice and crisp on the outside.
The meal was inspired by a food truck I used to partake of regularly, who had a dish almost exactly like this, except their sauce was I think just a straight bechamel. The part that's really missing from the meal is the Hong Kong style milk tea I would've gotten from the truck. I'm very sad I don't have the stuff to make my own.
