I haven't - I've been to GenCon, which is a board and card game focused convention here in the US, and what typically happens when I go there is I bumble around aimlessly, occasionally running into people I know who are doing things and then I do those things. That said, the GenCon events schedule seems a bit larger than the PAX Aus one, or perhaps just broken down into smaller units.

Sunday, 5:30-6:30 main theatre. This is the show closer and it's always packed, get in early if you can. It's how everything wraps up and is in many ways the most important part of the show.

I think the Vox Ludi panel
is going to be very interesting; it would have been scheduled before the acting guild showdown with devs started, but it's dead on topic.
Beyond that I don't think there's anything leaping out at me this year. I'd say just browse, try everything that looks fun. Be sure to join Korvys and I for JS Joust which is seriously how we spend SO MUCH TIME at PAX. Best game ever.
