The iPhone has to be perpendicular to the strings, and the light has to be shining pretty much on the strings. What's happening is that the video is being recorded in what is called CMOS, or rolling shutter, which doesn't take one picture at a time and string them together, but pans the sensor across the screen repeatedly. Each frame is not made of the same moment and is made up of slightly different milliseconds. The strings are in different positions during those times, and end up creating wave images when composited.
