Its kinda weird, the game has zip in the way of a tutorial mode or introduction to the game.

I'm not even sure how to get the spy to cloak.

I am pretty sure on how to get the heavy in a kick ass position with a medic and waste a couple of guys. (My first achievement was Iron Kurtain)

Weapons and hats are dropped randomly. In addition you can also unlock the same weapons by completing achievements for the class related to the weapons you seek. But drops are totally random and you can end up with anything. And if you're me that means about 8 million BONK! Atomic Punch drinks...

Read the TF2 wiki Mach. It'll help. Anyway, to help you start, special abilities are all right-click. These include:

Spy cloak
Flamethrower airblast
Sniper zoom in
Targe charge
Demoman sticky ignition
Medic ubercharge
Huntsman arrow knock release
Sandman baseball
Minigun rev
Throwing sandvich

Also, if you get a bunch of one item you can craft them into metal for a new item.

Quick bump. I had theorized that selection of the hats would slow down in the middle, since players wouldn't have any hat they chose, yet the pickings would still be large enough where it wouldn't be simple.
