I've also heard Dutch Babies referred to as German Pancakes. As the above demonstrates, I don't that's fitting with the awesome strangeness that is the Netherlands.

It doesn't look like much, but it is in fact a delicious and simple bean dip, suitable for parties of the New Years variety. It heavily features cumin, coriander, cinnamon, red kidney beans, onion, garlic and tomato paste.

For my mom's birthday, us kids got out the pasta roller. I made the dough, the others rolled it out, then we made ravioli. We made one that was filled with a bacon/pinenuts/parmesan/ricotta, and the other with butternut squash/goat cheese. we then had a choice of three sauces; browned butter and sage, sundried tomato/shallots/mushrooms, and pesto. They were fantastic!

Oh man, that sounds heavenly. I've been meaning to experiment with homemade pasta and sauces for a long time now, but just haven't gotten around to it.

Making your own pasta is 'easy', it just takes a lot of time and effort. But it is AMAZING. The dough is a a high-gluten flour (semolina or tipo 00 - I think I prefer semolina) and eggs. Having really good quality eggs makes a big difference. Having a pasta roller is handy, but not necessary.

Oh interesting point. I was just talking about this with some friends of mine. Do you ever put spices or some such into the dough before you make it? I did some linguini using basil oil and it was friggen great. Another person swears by pepper oil if she's going to use it for a cacciatore or truffle oil if their serving it with anything with mushrooms.

I'm still a beginner, but one thing you can do is add fresh herbs - basil, oregano, thyme - on to the dough at the last setting, the fold it over and roll it one more time. In my Jamie Oliver book he calls it 'stained-glass' pasta and uses it in lasagna, it looks heavenly.

I like the dough to be the 'canvas', so to speak - let the sauce and/or filling be the colour.

I don't find potato and salmon pair together very well.

I don't know much about smoked salmon, but baked, grilled or steamed with sauteed garlic and spinach over a brown rice pilaf always makes for yum.

Two very good foods, but you run the danger of masking your entree with the heavy potato flavor, IMHO. If you wanna stick with the salmon (and why wouldn't you? Smoked salmon is tasty), the above suggestion of a nice rice dish is a good choice.

My suggestion, as I've made this before, might be to go with some of those big pearl couscous and use a bit of red wine vinegar in the water you cook them up in. Gives a nice slight bite to contrast the smokey in the fish. Maybe cover the whole thing with little bit of a mustard creme sauce (made incredibly easily by reducing some cream or milk down and wishing in some mustard while you're doing it)

Also, here's what they look like when they're actually done. I was trying for LRR blue cream cheese frosting but all I succeeded in dyeing that colour was my hand. But I hope the idea gets across well.

Here's mine:

I had extra cranberries left over from the holidays so I dumped in something like 2 cups. Because of the density of the bread, all the cranberries wound up on the crust of the bread but it turned out really well. Dump double the amount of spices except for cloves and try and use whole wheat flour whenever you can. If the cranberries do wind up on the crust, be careful that they don't drop off when taking the bread out of the pan/container. It does wind up being a fairly dense bread but you don't need sugar because the sugars in the fruit are really sweet after being heated. Enjoy!
