I've never found the need to pound breast (heh). I find if you make a nice deep pocket, put your filling in, wrap very tightly with saran wrap and refrigerate for an hour, it holds together well. Of course I will commonly wrap it with prosciutto as well.
Last night I tried roasting my chicken breasts a little differently. I thinly sliced some shallots and browned them in a pan with a little olive oil, then added some pear jelly to caramelize and deglazed with white wine. I then added the seasoned chicken breasts and seared on both sides before finishing them in the oven. It was really good!

Since we're talking about chicken, anyone have a good idea on what to do with drumsticks? If I don't get any new ideas, I'll probably go with my old fall-back of cornflake chicken. Which is really good, but done Very often.

I made a good one a while ago, basically roasted a whole bunch in a mix of canola oil, sesame seed oil, ginger, orange zest + juice, and some teriyaki sauce as I recall. Roasted in an open dish at... 350? 400? for about 45 minutes to an hour, turning once. Very tasty, very juicy, and the sauce was great on rice (though fatty).

Yeah, I decided on the corn flake chicken, this time with lots of parmesan cheese added to the mix. And some left-over sketchy rice.

Home-made Shrimp Mac & Cheese
Enough for a few meals.
It's not as good as restaurant versions I've eaten, but I blame the cheap cheese sauce I bought.
And of course, being from Maryland, it's smothered in Old Bay.

I didn't find the need to pound it too much, Just a little to get it the thickness I wanted.
I didn't wrap it at all, tied it up with cooking twine to get it to stay rolled up, didn't really have time to wait around for an hour to refrigerate anything.

I made carolines last night! Pretty much an eclair with no chocolate or cream. Instead it was filled with shredded chicken and topped with bbq sauce.

Oh, and rabbit conclusions: Tasted like gamey chicken, smelt like that previously unidentifiable meaty smell that dog food always seems to have. Would not recommend.

I make fast chicken soup as follow
2 quarts chicken broth
2 large onions, cut into medium dice
1 store-bought roast chicken
1 quart water
2 large carrots, peeled and cut into rounds or half rounds, depending on size
2 large stalks celery, sliced 1/4 inch thick
3 tablespoons vegetable oil
1 teaspoon dried thyme leaves

I had some leftover cooked penne from last night's pasta dinner, so decided to make a little something from it...
A little butter, some sugar, honey, coconut, some eggs, yogurt, sour cream, vanilla, and baby, you got a noodle kugel going!
Even got to use the ramekins I rarely utilize!

Kathleen's recipe for chicken during DB finally made me try and use my steamer pot for the first time. I used a piece of chicken seasoned with what little I have around, some mixed frozen vegetables, and some potatoes from a leftover dish my uncle gave me on the weekend. The chicken turned out rather excellent, the vegetables needed some butter more seasoning, which I had neglected, but were still better than boiled, and while the potatoes were a disappointment (I'm not a fan of the dish they came from, but I wasn't one to refuse free food), they still added to the flavour of everything.
Final verdict: I think I shall use the steamer as much as possible from now on. It was easily one of the best meals I've ever made (not saying much), and one of the easiest to make.

Tomorrow I am attempting curry for the first time ever. With Lamb! And a "true" shepherd's pie.
As for what I have cooked, yesterday I made a beautiful/yummy strawberry shortcake, and a delicious pork roast with this pretty yummy smoked sea salt I picked up at school. Though after the roast the was cooked, I discovered whoever packaged the roast did not remove the feather bones or the chine bones. And it would have been such a good oppertunity to practice my new butchery skills. =(
