I'm thinking of splurging on cheese this week (at $10/lb and shouldn't be eating it really, it's splurging). However should I get Smoked Gouda, Jalepeno Havarti or a welsh cheddar I've not had. Suggestions?

Smoked Gouda is really good. Especially if you find and applewood smoked cheese. It's the favored cheese of my dad and step mom.
Also, gravy on cheese and fries = delicious. As long as it's a good flavorful gravy.

What, Gjetost? That's great stuff; the 'crap stuff that Norway exports to the rest of the world' is quite nice as it is, so my mind reels at how amazing the good stuff you hold on to would be.

I've wanted to try goat cheese, we have chevre here too. Rolls of it it, or small portions of like seasoned/flavored ones (purple haze, sgt pepper, psychedillic, etc) but 1) it's 6.50 for a 4oz disk and 2) I'm hesitant to eat it.
Is it really worth it?

I don't like chilli on my chips to be honest. It kind of obliterates the cheesy-chippy flavour. Same applies to the other things you mentioned. I'll take cheese+bacon over chilli as an accompaniment any day.
