I think there's room for changes with Final Fantasy 7. I wouldn't mind taking FFX or FFXII's more dynamic battle system style with the Materia system. Dialogue definitely needs rescripting.
Ultimately I'm expecting the final part of the game to see the most changes, as it was what suffered due to the N64 to PS1 shift and running out of budget. They have the chance to iron it out.

I'm actually looking forward to SMT #FE after watching the actual game-play videos. Probably more than P5 if just because I don't have to buy a box that'll go in the closest after playing it.
