Vegetable Chili

3 TB olive oil
1 onion, diced
2 celery stalks, sliced
1 carrot, diced
1 red pepper, diced
1 TB ancho chili powder
1 TB oregano
2 TB cumin
1 TB ground chipotle pepper
12oz corn kernels
1 can black beans, drained
1 can diced tomatoes
2 TB red wine vinegar
cooked chopped eggplant and/or cooked portabello mushrooms, about a pound or so.

Saute' the onion, celery, carrot, and pepper in the olive oil until cooked through. Sprinkle the spices over the mixture and cook one minute. Add the corn, beans, tomatoes, and meat analog (eggplant or mushrooms). Put the vinegar in the tomato can and shake in order to get every last bit of juice out of it, then pour into the mixture. Cover and simmer for 20 mins.
